Homemade Biryani Masala Powder Recipe, TamilNadu Biryani Masala

- 2 inch Cinnamon sticks/இலவங்கப்பட்டை
- 5 Green Cardamom/பச்சை ஏலக்காய்
- 2 black Cardamom/கருப்பு ஏலக்காய்
- 10 Cloves/ கிராம்பு
- 7 Bay Leaf/பே இலை
- ½ nutmeg/ஜாதிக்காய்
- 1 tsp Black Stone Flower/கல்பாசி
- 3 Star Anise/அனிசிப்பூ
- 1 Black Pepper/மிளகு
- 1 tbsp Fennel Seeds/சோம்பு
- 1 tbsp Cumin Seeds/சீரகம்
- 2 tbsp coriander seeds/கொத்தமல்லி விதைகள்
- 3-5 dry red Kashmiri chilies/சிவப்பு காஷ்மீரி மிளகாய்
- ⅓ tsp turmeric powder/மஞ்சள் தூள்
- Take all the ingredients in a dry pan and roast it on low heat for 5 mins till it is well toasted.
- If using dry red chilies and coriander seeds add it along with other spices while toasting,
- if using coriander powder and chili powder, add that after the whole spices are well toasted.
- And give a quick toss for 30 sec.
- let it cool down for 5 mins.
- Take them in a blender and make it into a fine powder.
- Now store this in an airtight container.
