Karupatti Kaju katli recipe, How to make Kaju barfi

- 1 cup Cashew Nuts(Kaju/munthiri paruppu)
- ¾ cup karupatti(palm sugar/panai vellam)
- ⅓ cup Water
- ¼ tsp cardamom powder
- Ghee For Greasing – 1-2 Tsp
- Silver Leaf, German Paper Or Vark For Decoration (Optional)
- Powder the cashews until its fine powder. (Do not over grind the cashews as they turn oily)
- Heat a pan over medium heat. Add water and Karupatti(palm sugar).
- Let it boil until karupatti is completely dissolved.
- Stain the impurities and bring back boil again
- Boil the syrup till it reaches the single string consistency
- Turn the heat to medium-low and add cashew powder and stir well.
- Keep stirring continuously until it forms a soft dough.
- Add a tsp ghee at the final stage and switch off the stove.
- Wait till you are able to handle the heat.
- Now grease your hand with ghee and knead well for a minute.
- Spread a parchment paper on a working surface and roll the dough with the help of a rolling pin.
- Decorate with edible silver leaf and cut into diamond shape using a sharp knife.
- Kaju katli is ready to serve.
