Ingredients
  • 250 grams okra/Vendaikkai/Bhindi, choose long ones
  • 3 tbsp besan/Kadalai Maavu/gram flour
  • ½ tsp garam masala
  • ½ tsp turmeric/Manjal Thool
  • ½ tsp chaat masala
  • ½ tsp red chili powder
  • 2 tsp oil/Ennai
  • salt, to taste
Instructions
  1. Wash the okra/Bhindi.dry the okra in a towel. Once dried, cut each okra into 4 slices.
  2. Then add in besan, garam masala, turmeric, chaat masala, and red chili powder.
  3. Then add the oil.
  4. Add little water and make a thick paste.
  5. Add the sliced okra into the bowl. Toss everything together.
  6. rest the mixture for 10 minutes.
  7. Line a large baking tray with aluminum foil. Then spray the foil nicely with oil.
  8. Then arrange all the coated okra slices on the baking sheet. Bake at 400-degree f for 20 to 30 minutes until brown and crisp.
  9. Then remove the tray from the oven and let it sit for 5 more minutes.
  10. Transfer to a serving plate, you can squeeze lemon juice or sprinkle some more chaat masala.
  11. Serve Kurkuri bhindi as an appetizer or a side to any dish.
