Ingredients
1 branch of romaine lettuce
2 medium, fresh cucumbers
2 medium tomatoes
5-6 strings of scallion, or 1 small onion
2-3 tbs chopped coriander
1-2 tbs finely chopped fresh mint
Dressing
1 small lemon
¼ cup olive oil
½ tsp ground black pepper
1 tsp salt
1-2 Tsp mustard
Instructions
To make the pita chips. Cut the bread into bite-size diamond, square or rectangle pieces. Drizzle with olive oil and salt, toss. Toast in the preheated nonstick skillet or 375°F oven, until golden color.Set aside to cool down
take lettuce, cucumber, shallots, olives, tomatoes add everything in a bowl.
make the dressing, take olive oil, mustard, lime juice, salt, and pepper. Mix everything well and add it to the salad.
Give a toss
finally, add the pita chips and serve.
