¼ cup extra virgin olive oil (plus more for garnishing)
2 garlic cloves
¼ cup freshly squeezed lemon juice
½ teaspoon of salt
Garnishes: A sprinkling of paprika, a swirl of olive oil
Instructions
Take a cup of chickpeas(kondai kadalai) soak it for 3 hours or overnight. Cook it till it becomes soft.
In a food processor, add the cooked chickpeas(drain water completely), sesame seeds, garlic,lemon juice, ½ teaspoon of salt and olive oil and pulse until smooth.
Spoon into serving dish, swirl a little olive oil over the top and sprinkle with garnishes—a little paprika
Notes
1. soak well the chickpeas and cook till it becomes soft otherwise you will not get creamy hummus. 2. while grinding if it is very thick just with oil dont add water.
