In pan heat 1 tsp groundnut oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp sesame and 3 dried red chilli.
roast on low flame till the spices turn aromatic.
cool the spices completely, and blend to fine powder without adding any water. keep aside.
now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, few curry leaves.
also saute 2 tbsp peanuts till they turn crunchy.
now add 1 cup of cooked rice along with prepared masala powder and ½ tsp salt.
mix well without breaking rice grains.
cover and simmer for 5 minutes or till rice absorbs flavour completely.
Notes
1. for peanut masala we can add garlic, cumin seeds i skipped adding them if you like you can add it. 2. instead peanut we can add cashew nut or almonds if you have alregic to peanut. 3. add groundnut oil gives nice aroma to the rice , you can add sesame oil also.
