Easy Vada Pav Recipe, Step by Step Mumbai Pav Vada Chutney

- For besan batter(gram flour batter):
- 1 cup besan/gram flour
- pinch of asafoetida / Hing
- water as required
- salt to taste
- For Potato(aloo) stuffing:
- 2 potatoes boiled, peeled and mashed
- 1 tbsp ginger finely chopped
- 2 green chilies finely chopped
- ½ tsp mustard seeds
- pinch of asafoetida / Hing
- ½ tsp turmeric powder
- ⅓ cup coriander leaves chopped
- 1 tsp lemon juice(i didn't add)
- salt to taste
- For assembling one vada pav:
- 2 tbsp green chutney
- 2 tbsp garlic chutney
- 1 pav bun
- 1 Batta vada(Wada)
- 1 fried green chili
- Making the Besan Batter(gram flour batter) for Batta Vada:
- Take a bowl add the gram flour(besan flour), salt and water mix well without any Lumps.
- The batter consistency should be neither thick nor thin. Once you mix the batter keep aside and make the Batta Wada for vada pav.
- Direction to prepare Batta Vada(Wada):
- First Boil the potatoes and peel the skin. Mash it and keep aside.
- heat oil in a pan. add mustard seeds, Hing and let it splutter.
- Add finely chopped green chilies and ginger, saute.
- add chopped coriander leaves.
- Add the mashed potatoes and mix well.
- Add turmeric powder, salt, and lime juice, mix well.
- Let the vada mixture to cool down and then make small balls.
- Dip the balls inside the Prepared Gram flour batter(besan batter) and drop it into the hot oil.
- Deep fry it till golden and remove it from the stove.
- Batta Vada(Wada) is ready now.
- Assembling the Vada Pav:
- check here the recipe for green chutney and prepare, keep ready.
- Dry garlic chutney recipe, make and keep ready.
- Slice the vada pav into ¾, make sure that you are the slice it into the half
- spread the dry garlic chutney powder at the one side of the pav and the other side with green chutney.
- Place Batta Wada(Vada) in between the Pav and a fried chili inside, serve immediately.
I forgot to add lemon juice while making the Vada, please add while you make.
