- 2 cups basmati rice/jeeragasala/kaima rice
- 4 cups water(adjust according to the variety of rice you use)
- 1 cup sliced onions
- 1 tbsp ghee(for roasting the nuts and onions)+ 2 Tsp(rice)
- 5 cashew nuts
- 5 raisins
- 1.5 tsp salt
- Soak the basmati rice at least for 15 mins before cooking.
- Heat ghee in a pan or in a pressure cooker. Fry the cashew nuts and raisins, until golden brown.Keep aside.
- In the same pan Fry the Sliced onions, until golden brown. Keep Aside.
- Add ghee(if needed) i used the same ghee which is fried the onions. Add the cinnamon stick, cardamom, cloves, and fry for a minute.
- Add the sliced onions, fry till it becomes translucent.
- Drain the water completely from the rice and then add the soaked rice to the pan. add ghee and fry for a minute.
- Now add salt and water, mix well.
- Close the lid and allow the rice to cook.
- Once the rice is done garnish it with fried onions, cashew nuts, and raisins.
