Vellarikka Thayir Pachadi recipe in Kerala Style. Cucumber pachadi is made of coconut and Curd. Freshly ground coconut paste gives a nice flavour to the pachadi. Learn to make healthy and easy pachadi recipe for onam.

Ingredients
  • 1 cup kerala cucumber chopped
  • ½ cup Curd
  • For coconut paste
  • ½ cup coconut
  • 2 green chilli
  • ⅓ tsp Mustard Seeds
  • 1 inch ginger
  • 2 curry leaves
  • 1 tbsp curd
  • salt as required
  • For Tempering
  • 1 tsp mustard seeds
  • 3 curry leaves
  • 1 dry red chilly
Instructions
  1. Grind the grated coconut, green chilies, cumin seeds,curry leaves, ginger and mustard seeds into a smooth paste with little curd.
  2. Heat oil for tempering in a small frying pan and add the curry leaves, mustard seeds, when the mustard seeds start popping, remove it from the stove.keep aside.
  3. cook the chopped cucumber with little water, till it turn to soft.
  4. Once it become soft,add the coconut paste to the cooked cucumber and heat it over low flame. Allow to cool and add the rest of the curd and set it aside.
  5. add tempering to the pachadi and mix well.
  6. Serve with steamed rice and enjoy!
Notes
I have used kerala cucumber. You can try with normal cucumber also.
Let the cucumber completely cook so that the tasty of the pachadi will be delicious.
Use thick curd.
