Korada Recipe with video, Chettinad side dish recipes
Serves: 3
  • 1 cup chopped shallots
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 sprig curry leaves
  • 3 garlic pods(crushed)
  • 1-inch ginger(crushed)
  • A gooseberry sized Tamarind or Tamarind extract
  • 1 tsp chilly powder
  • ⅓ tsp turmeric powder
  • 1 tsp salt
  • 1 tsp jaggery grated.
  1. Heat oil in a pan, add mustard seeds, urad dal, let it to sputter.Now add curry leaves and dry red chilly
  2. Crush the ginger and garlic add it to the pan and saute well.
  3. Now add in the Chopped shallots and fry well, till it becomes golden brown.
  4. Add red chilly powder,turmeric powder and salt mix well.
  5. Add the Tamarind with the lid and cook.
  6. Once it becomes thick add jaggery and remove it from the flame.
  7. Transfer it to a bowl and serve hot with idli and dosa.
