Korada Recipe with video, Chettinad side dish recipes

Serves: 3
- 1 cup chopped shallots
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 sprig curry leaves
- 3 garlic pods(crushed)
- 1-inch ginger(crushed)
- A gooseberry sized Tamarind or Tamarind extract
- 1 tsp chilly powder
- ⅓ tsp turmeric powder
- 1 tsp salt
- 1 tsp jaggery grated.
- Heat oil in a pan, add mustard seeds, urad dal, let it to sputter.Now add curry leaves and dry red chilly
- Crush the ginger and garlic add it to the pan and saute well.
- Now add in the Chopped shallots and fry well, till it becomes golden brown.
- Add red chilly powder,turmeric powder and salt mix well.
- Add the Tamarind with the lid and cook.
- Once it becomes thick add jaggery and remove it from the flame.
- Transfer it to a bowl and serve hot with idli and dosa.
