Ambur star hotel style briyani.you can make the ambur chicken briyani at home under 30 mins and also no pre preparation required to make this briyani.

Ingredients
  • 100 grams soya chunk
  • 1 and ½ cup Seeraga Samba Rice or basmathi rice
  • 3 cup water
  • ½ cup (125 ml) refined Sunflower Oil
  • 1 tbsp ginger garlic paste
  • 2 medium Onion, sliced
  • 2 medium Tomatoes, chopped
  • 4 Red chillies ground to paste 0r 1 tsp chilly powder
  • 3 Cloves
  • 3 Cardamom
  • 3 Cinnamon sticks
  • 1 bay leaves
  • 1 tsp fennel seeds
  • ⅓ tsp turmeric powder
  • few Coriander leaves
  • few Mint leaves
  • 1 tbsp + 2 tbsp Curd
  • 2 tbsp salt
Instructions
  1. Rinse and soak the rice in water,set aside. Soak the soya chunk in hot water cut it into 2 keep aside. Heat oil in a pan and add the cinnamon stick,cardamom,bay leaves,fennel seeds. Now add a table spoon of curd and ginger garlic paste,fry for 2-3 minutes on medium flame. Add in the onion,tomatoes,green chilly fry well. add in the chilly powder or chilly paste,salt,turmeric powder,cook till the raw smell goes.now add in the soya chunk without water.
  2. now add in the soya chunk without water let it cook for 2 minutes and then add the curd. Add the coriander leaves and mint leaves.
  3. Add in the rice and mix well. Now tranfer the briyani mix into the pressure cooker and pressure cook it for just 2 whistles. Not more than that. Ambur briyani is ready to serve now.
  4. Serve the Ambur briyani with raita or briyani kathirikai or dal cha.
Notes
While adding curd at the beginning make sure that it should not burn and add the ginger garlic paste immediately.
i have used basmati rice but try to use seeraga samba rice for good taste.
i have used the chilly powder you can try with chilly paste for more spicy briyani.
you cook rice in electric cooker also but if you are using pressure cooker do let it to cook more than 2 whistles.
